This is a Scandinavian cookie recipe that has been passed down by my Grandmother. She makes this for us every Christmas and is considered a special treat. To make this easier the have a Pizzelle (Krumkake) iron available on amazon ( I have the link below). When making the dough, you want the consistence to be of a thick waffle batter.
Whipped Cream krumkake
1 cup sugar
½ cup butter (melted)
3 eggs
1 tsp. vanilla
½ cup whipped cream (whipped)
2 cups flour

Beat eggs and add in sugar, whipped cream, butter, and vanilla. Add in enough flour to handle easily, and test on a hot iron. Place about 1 tbs. of dough on the iron. when lightly golden, remove from the iron. You may leave them flat, or roll to a cone shape and fill with whipped cream. Dust with powdered sugar and enjoy!
