Through the years, I was always told by others that parenting would get easier as they grew up, with 6 children, some days that was hard to even imagine. Sometimes the last thing I want to do it figure out what to have for dinner, let alone have shop for it and cook it! If fact it reminds me of a funny quote:

I just love the thought of having farm fresh, organic chicken delivered to my door in package sizes that actually work with my family. Too many times I have explored mail order meals and they are meant to be consumed by 2 people or at best a very conservative 4, well that doesn’t work with my family of 8. With Perdue Farms, they provide chicken portions that will work for ANY size family…. whether you are feeding an army or have just two, they have you covered. Most products are portioned out in single vacuum sealed packages that can feed 2-3….. need more use 2 or 3 individual packages to feed more. This make it work for everybody!
The perfectly portioned packages made it great to defrost just what I needed, no having to chip away at a large bag of stuck together breasts or plan too far in advance. I was able to to have enough time to plan, prep, and prepare dinner in only 1 hour from frozen chicken.
I wanted to share with you all one of my favorite family meals on a budget! This recipe works amazing with the Perdue Farms Chicken Chunks, this wasabi chicken stir fry, has a little bite and is a twist on an original stir fry. I hope you find this so simple that it will become a week night favorite, oh and did I mention this recipe can be made using only one pot (we all love that right?!?) and the whole family will love it, yes, even the kids.
Wasabi Chicken Stir Fry
Ingredients
- 2 lbs Purdue Farms Chunked Chicken
- 3 packages of Yakisoba noodles
- 5 cups of fresh or packages stir fry vegetables
- 1 cup flour
- 2 tbs of Wasabi powder
Instructions
- In a large fry pan or cast iron skillet, add 3 tablespoons of olive oil and bring to a medium high heat
- In a small bowl, stir together flour and wasabi powder
- 1 piece at a time, coat chicken in wasabi mix, shake of excess and place in hot fry pan
- Cook all chicken thoroughly, remove and set aside
- In the same pan, add an additional tablespoon of olive oil, add veggies and sautes til tender
- Add yakisoba noodle, cook and saute til warm and tender
- Add cooked chicken to final dish
- serve and enjoy
