Strawberry Cake Cookies With White Chocolate
Nothing says summer quite like strawberries, try the quick and easy dump cookies using fresh strawberries and strawberry cake mix! If you are a gardener, this will be the perfect recipe to showcase your strawberries, even if you have a small yield.
Strawberry Cake Mix Cookies
Ingredients:
1 box strawberry cake mix
8 TBSP sweet unsalted butter (melted)
1 large egg (room temperature)
1 tsp vanilla
1/2 package light cream cheese (room temperature)
1 C white chocolate chips
1/2 C diced fresh strawberries (stems and hull removed)
1 container of pink sprinkles
Directions:
Combine butter, egg, vanilla, and cream cheese in a bowl.
Mix together thoroughly.
Add cake mix, half of the box at a time, mixing until well combined.
Stir in white chocolate chips.
Hand mix in the diced fresh strawberries.
Refrigerate for one hour.
Preheat oven to 350 degrees.
Pour the pink sprinkles in a bowl.
Set aside the pink sprinkles.
Using a small ice cream scoop, measure out the cookies balls.
Roll dough into 1 inch balls.
Roll each dough ball in the pink sprinkles.
Place dough balls onto a parchment-lined cookie sheet.
Bake at 350 degrees for 9 minutes.
Set a timer for 9 minutes.
Remove from oven.
Allow cookies to cool on the cookie sheet for several minutes.
Remove cookies to a wire rack to cool completely.Makes 3 dozen cookies.
Strawberry cake cookies can be stored in an airtight container for 4-5 days.
