I grew up on this easy and quirky version of Mac & Cheese that includes corn and tomatoes. Every time I had mentioned it to someone they were a little thrown off by the corn but once they tasted it, they fell in love. The corn adds a little crunch and sweetness that blends so well with the cheese and tomatoes.
Since this is such a quick and easy recipe (taking let that 20min from start to table), I make sure to keep the ingredients ready to go in my pantry for those unexpected weeknight dinners when my best laid plans just didn’t work out. No matter how much I try to plan for an extravagant dinner, there always seems to be a hiccup…. someone is sick, my husband got called into work, practice runs late and the list could go on.
Guess where I was on the 3oth? That’s right! I took a trip down to my local Albertson’s, not only was it their grand re-opening but I wanted to make sure I was amongst the first to get in on these HOT deals.
Safeway and Albertson’s are having their stock up sale (9/30-10/13), providing unreal prices throughout the store making this the perfect time to stock your pantry and have this easy recipe ready to go. For example, these Del Monte Stewed Tomatoes are regularly $1.89 but with the stock up sale, the are only $.69 each when you buy 4…… this is a steal at more than half off!
Make sure you roam around the whole store and take a peek down each isle, as there are tons of unadvertised deals and promos going on throughout the store during their stock up sale. Just keep an eye open for their stock up sale tags.
With their stock up sale prices, I was able to make this dinner for my family of 9 for only $9.97, that is just a little over $1 per person…. if you want to go super cheap omit the hamburger which would make this meal about $4…. that is less than $.45 per person.
Murphy’s Mac & Cheese
1 box of elbow noodles
1 can of store brand tomato soup
1 16oz package of shredded cheddar cheese
1 lb of ground hamburger
1 can of Del Monte Golden Sweet Whole Kernel Corn
1 can of Del Monte Stewed Sliced Tomatoes
Directions –
Boil elbow noodles in large pot. While boiling, fry and drain hamburger in separate fry pan.
Once noodles are tender, drain and place back in pot.
Add drained corn, drained tomatoes, drained hamburger, can of tomato soup and 2 cups of shredded cheese.
Stir all ingredients together, heat until cheese is melted, and season with salt and pepper to taste.
This is also a great make ahead meal! Make a large pot on Sunday night and be ready for left overs or lunches all week long.
