I have been packing lunches for over 15 years now… and I can tell you, it is still a challenge. This is not my favorite task but after working at a school and seeing some of the school lunch options. I feel it is important to provide a well rounded meal for my children. Now, making something that they are actually going to eat…. that is even more of a challenge, not is much more frustrating than when you find out that your child has thrown away their lunch simply because “eh, I didn’t like it”, that is such a waste of your time and money.
My kids schools provide microwaves for the kids to heat up their lunches, this helps me expand my options. I recently discovered that they love homemade sandwich pockets. They like ham and cheese, turkey and stuffing and their new favorite is Hawaiian Style Pizza Pocket.
Hawaiian Style Pizza Pocket
100% Whole Wheat Bread
1 Mini Babybell® – light
2 slices of Canadian Bacon
1/4 cup of Del Monte® Pineapple Tidbits
1 tablespoon of any pizza sauce
You will need a panini press or an electric sandwich maker
Layer your sandwich, starting with bread
add 1 slice of Canadian Bacon
fill with sauce, 1 Mini Babybell cut in half and lay them side-by-side, and pineapple
top with additional slice of Canadian Bacon and top piece of bread.
Place in your panini press or an electric sandwich maker for 2 minutes
Eat your Hawaiian Style Pizza Pocket immediately or pack away in parchment paper for microwaving at school.
