I am so excited for this summer. We recently had some of our closest friends move back in town and we have a lot of catching up to do! I can’t think of a better way to spend an evening with friends than in the comfort of our own backyard… no loud restaurants, expensive plates or feeling rushed to wrap up the night. Last weekend we had our first cook out of the season with friends, and I had a few recipes that I have been itching to try! I headed to my local Walmart, because I knew I would be guaranteed the best prices and they always have what I need in stock. When you go to Walmart next, head down the soda aisle and look for the new Dr Pepper designs. For our main course we will be having Slow Cooked Pulled Pork with Dr Pepper Rio Sauce sandwiches topped off with Creamy Horseradish Slaw. To drink, we will be enjoying a deliciously creamy Dr Pepper float. If you haven’t tried one of these Dr Pepper and ice cream floats I highly suggest you do… it is so easy to make and it offers a unique twist on a classic that will be sure to impress your guests. For best results, wet your glasses and put them in the freezer 30 minutes prior to serving, this will keep your float extra cold and frosty.

Slow Cooked Pulled Pork with Dr Pepper Rio Sauce
- 5-6lb bone in pork shoulder roast
- 2 cans Dr Pepper
- 1 1/2 cup brown sugar
- 1 14oz can of red enchilada sauce
- 1 small can of roasted green chilies
- 1 tsp crushed garlic
- salt
- pepper
- cayenne pepper (optional)
In a slow cooker place your roast, fat side up. Add 1 can of Dr Pepper and 1/2 cup brown sugar. Add cayenne for desired heat.
Cook on high for 5-7 hours depending on size, or until meat is tender and flakes apart easily.
Once pork is cooked and tender, drain all juices and shred pork. Place pork back into the slow cooker.
Prepare sauce by blending 1 can of Dr Pepper, 1 cup of brown sugar, enchilada sauce, chilies, salt and pepper. Blend with blender or submersion blender for 45-60 seconds.
Pour sauce into slow cooker with pork, mix together and heat up for 30 minutes.
Serve on a bun with horseradish slaw.
Horseradish Slaw
- 1/2 cup sugar
- 1/2 cup mayonnaise
- 1/2 cup milk
- 1 tbsp of creamy hot horseradish
- 2 1/2 tsps of lemon juice
- 1 1/2 tsps of white vinegar
- salt
- pepper
In a large bowl mix all ingredients except cabbage. Once sauce is mixed well add cabbage and toss til thoroughly coverage.
For best flavor, refrigerate for 30 min before serving.
