Coconut Curry Yam Soup

This is a wonderful easy soup that is skinny on the waistline and full on flavor.
Ingredients
- 5-6 Yams
- 2 Onions
- Salt
- Olive oil
- 1 can of lite coconut milk
- 1/4 c curry powder
- 1tbs of concentrated chicken stock ( I like knorrs homestyle)
- 2tbs of fresh grated ginger
- 1/2 tsp of crushed red pepper flakes
- Salt and pepper to taste
Instructions
- Peel, cut and cube yams and onions
- Toss with salt and olive oil
- Broil yams and onions in a shallow pan until soft and caramelized
- Transfer yams and onions into a large stock pot
- Add just enough water in the pan to come to the top of the yams and onion
- Add remaining ingredients
- Use a submersion blender and blend until completely smooth
- Garnish with sour cream or toasted coconut flakes
