Easy School Morning Breakfasts with Eggo Waffles – Because Mornings Are Hard!

If you’re anything like me, mornings during the school year start with the best intentions—until reality hits. The alarm goes off, and suddenly, we’re in full-on survival mode. One kid can’t find their shoe, the other is still half-asleep on the couch, and somehow, despite laying out backpacks the night before, something crucial is always missing. It doesn’t matter how many times I tell them to be ready, mornings always feel like an Olympic sport.
By this time of year—when the school calendar is inching toward spring break, but we’re still in the thick of homework, projects, and early wake-up calls—keeping things organized and exciting in the mornings feels next to impossible. Let’s be real: we’re exhausted, the kids are dragging their feet, and everyone just wants summer vacation to hurry up.
But one thing I don’t need added to my list of stressors? Breakfast.
That’s why I’m always looking for easy, delicious, and filling breakfast options that my kids will actually eat. And that’s where Eggo Waffle Breakfast Sandwiches come in.
Why Eggo Waffles?
If your kids are anything like mine, they get bored of the same old breakfast routine. Cereal? Gets soggy too fast. Toast? Barely holds them over until lunch. And making a full homemade breakfast on a weekday? Not happening.
That’s why I always keep a box (or two) of Eggo Waffles in my freezer. They’re quick, versatile, and—let’s be honest—everyone loves them! Plus, Eggo waffles come in tons of different flavors, so even if your kids are picky eaters, there’s a version they’ll love. From classic Homestyle and Buttermilk to flavors like Blueberry, Chocolatey Chip, and Cinnamon Toast, there’s something for everyone.
What I love most is that Eggo waffles are perfect for more than just syrup and butter. They make an awesome base for creative, satisfying meals—like these easy breakfast sandwiches that my family is obsessed with!

Want to make it ahead of time?
You totally can! I like to precook the sausage and the egg, assemble them together with a slice of cheese, wrap them in parchment paper, and pop them in the fridge in a prep container Sunday night, that way I am ready to go In the mornings, just heat them in the microwave while the EGGO waffles are in the toaster or you can air fryer the sandwich as a whole for an instant, stress-free breakfast.
