Air Fryer Loaded Potato Cheese Squares
These Air Fryer Loaded Potato Cheese Squares are a great treat during the holidays. Use the potato left overs to create these simple appetizers or late night snack.
Ingredients:
6 C pre-cooked mashed potatoes
2 C shredded colby – jack cheese
1/2 C cream cheese (room temp)
1 lb, bacon (cooked, cooled, and crumbled)
1 bunch green onions (Diced) (reserve 1/2 for garnish)
3 fresh jalapeno’ (diced)
1/2 TBSP salt
1/2 TBSP black pepper
1 TBSP onion powder
1 C ham, (Diced)
1 lb Colby – Jack cheese, sliced into 1-inch squares (12)
1 C flour
5 large eggs beaten (room temp)
3 C panko breadcrumbs
Non – stick Olive oil spray .
Directions:
Stir the pre-cooked mashed potatoes in a large bowl.
Mix together the colby – jack cheese, cream cheese, bacon, jalapeno’s, diced ham, green onions, salt, pepper, and onion powder in a second bowl.
Add the mash potatoes to the cheese mixture together and stir to combine until smooth.
Line a baking sheet with parchment paper.
Scoop the potato mixture onto the prepared baking sheet.
With a knife smooth out the top of the mixture.
Needs to be 1 1/2 – 2inches inches thick
Press the cheese squares in the center of the potato mixture.
With the potato mixture, cover and seal the tops of the cheese squares.
Smooth out the tops of each potato mixture.
Freeze for 1 hour.
Slice the mixture into squares making sure that each square has a cheese square in the middle.
Put the flour in a medium bowl.
Pour the beaten eggs into a second medium bowl.
In a third medium bowl add panko crumbs.
Dip each square into the flour, shake off the excess.
Then dredge the same square in the egg.
Then dip the squares into the panko.
Set the squares to the side until all are completed.
Preheat air fryer to 400 degrees.
Put 3-4 potato cakes in the basket, in a single layer.
Mist the potato squares with a bit of olive oil.
Close the Air fryer.
Bake at 400° for 14 minutes.
Flip the potato squares after 7 minutes for even cooking.
Mist the other side with olive oil
Finish for an additional 7 minutes
Makes 10 servings.
Serve warm.
Garnish the potato dippers with crumbled bacon, shredded Parmesan cheese, and chopped green onions.
Suggested toppings: Sour cream, Sriracha sauce, tobacco, chives, salsa.
