Thinking back as a child, life was so much simpler… we ran around the neighborhood making up games, spent hours making the perfect mud pie, laid out in the back yard watching the stars and waited for what seemed like hours, clinching my fifty cents for that faint sound of the ice cream man to FINALLY make it to my neighborhood.
While life may not be as simple and “lazy”, I try to still make things memorable for my children and recreate a little of my childhood for them.
While shopping at Walmart the other day, they had a great deals on Cheerios™, in fact the whole line was on sale…. score!

Seeing these made me have a flash-back to some amazing Summer memories of packing our backpacks up with homemade treats and hitting the trails for some long bike rides. I decide to pick up a few boxes to have on hand for some creative recipe spinoffs my mother used to make. Because General Mills cereals are naturally flavored and does not allow ANY artificial colors or flavors, these are 100% safe for my son who is allergic to artificial food colors.
Here are two FUN recipes to try before Summer comes to an end. These are perfect for a late night under the stars or an energizing fulling snack, perfect for on the go. Give them a try and let me know what you think!
Fruity Cheerios™ Fried Ice Cream
Ingredients:
Ice cream
Fruity Cheerios™ (crushed)
Egg whites
Coconut oil
Whipped cream if desired
Directions
Scoop as many servings of ice cream as you need and set them in the freezer 1 hour in advance.
Roll ice cream scoops in crushed Cheerios™ until coated, then roll in beaten egg whites. Roll again in the crushed cheerios, and freeze the ice cream for two additional hours.
In a medium saucepan, heat ½ cup of coconut oil. Working quickly, place ice cream in hot oil and use a ladle to pour oil over the ice cream. Do not keep the ice cream in oil longer than 30 seconds.
Serve immediately with whipped cream or other desired toppings.
Chocolate Cheerios™ Strawberry Granola Bars
Dry Ingredients :
3 cups chocolate Cheerios™
2 cups quick rolled oats
2 cups freeze dried strawberries
1 cup shredded coconut
1 cup orange flavored dried cranberries
½ cup chopped macadamia nuts
Sauce ingredients:
2 tbs. Coconut oil
½ cup granulated sugar
¾ cup honey
Directions:
Mix all of the dry ingredients in a large mixing bowl.
On medium high heat, melt the coconut oil. As soon as the oil is warm, add the granulated sugar. Once sugar and oil is blended, add in the honey. Stir continuously until the mixture comes to a boil (watch carefully, the mixture will overflow quickly). As soon as it starts boiling, pour over the dry mixture and mix well.
While your granola sits to cool, spray a glass pan with cooking spray. Spread the granola into the pan and press down firmly with greased hands to even out your bars. Refrigerate until you are ready to serve, and slice them up!
